π Ingredients
Chicken & Broccoli
2 large boneless, skinless chicken breasts
4 cups broccoli florets
Olive oil spray
1 tsp garlic powder
1 tsp paprika
Β½ tsp salt
Β½ tsp black pepper
Optional: squeeze of lemon
Light Creamy Garlic Sauce (WW Version)
ΒΎ cup plain nonfat Greek yogurt
1 tbsp light mayonnaise
1 tsp Dijon mustard
1β2 cloves garlic (minced or paste)
1 tbsp lemon juice
1β2 tbsp grated Parmesan
Salt & pepper to taste
Splash of water to thin (if needed)
π Swapping mayo + sour cream + heavy cream for Greek yogurt saves a LOT of points.
π©βπ³ Easy Instructions (One Pan Option)
1οΈβ£ Cook Chicken
Spray skillet with olive oil spray.
Season chicken with garlic powder, paprika, salt & pepper.
Cook 5β6 minutes per side until done.
Let rest, then slice.
2οΈβ£ Cook Broccoli
In the same pan:
Add broccoli + 2 tbsp water.
Cover and steam-sautΓ© 4β5 minutes until tender-crisp.
(Or microwave-steam for ultimate easy mode.)
3οΈβ£ Make Sauce
Whisk all sauce ingredients in a bowl until smooth.
4οΈβ£ Assemble
Add broccoli to bowl β top with sliced chicken β drizzle with sauce.
