Ingredients
- 1 can (28 oz) whole tomatoes with juice
- 2 cans (10 oz each) Rotel diced tomatoes and green chilies
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 whole jalapeño, thinly sliced (remove seeds for less heat)
- 1/4 teaspoon sugar (optional – can omit for strict zero points)
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/2 cup fresh chopped cilantro (adjust to taste)
- Juice of 1/2 fresh lime
Instructions
- Add the whole tomatoes (with juice) and Rotel tomatoes into a large mixing bowl.
- Lightly crush the whole tomatoes with a spoon for a chunkier texture, or pulse briefly in a blender for smoother salsa.
- Stir in the chopped onion, minced garlic, and sliced jalapeño.
- Add the salt, cumin, and sugar (if using). Mix well.
- Fold in the fresh cilantro.
- Squeeze in the fresh lime juice and stir again.
- Refrigerate for at least 30 minutes to allow the flavors to blend.
