Ingredients

  • 1 can (28 oz) whole tomatoes with juice
  • 2 cans (10 oz each) Rotel diced tomatoes and green chilies
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 whole jalapeño, thinly sliced (remove seeds for less heat)
  • 1/4 teaspoon sugar (optional – can omit for strict zero points)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/2 cup fresh chopped cilantro (adjust to taste)
  • Juice of 1/2 fresh lime

Instructions

  1. Add the whole tomatoes (with juice) and Rotel tomatoes into a large mixing bowl.
  2. Lightly crush the whole tomatoes with a spoon for a chunkier texture, or pulse briefly in a blender for smoother salsa.
  3. Stir in the chopped onion, minced garlic, and sliced jalapeño.
  4. Add the salt, cumin, and sugar (if using). Mix well.
  5. Fold in the fresh cilantro.
  6. Squeeze in the fresh lime juice and stir again.
  7. Refrigerate for at least 30 minutes to allow the flavors to blend.
