Ingredients
Peach Filling
- 4 cups sliced peaches (fresh, frozen, or canned in juice, drained)
- ¼ cup granulated sugar substitute or monk fruit sweetener
- ½ tsp cinnamon (optional)
Batter
- ¾ cup all-purpose flour
- ¼ cup brown sugar substitute
- 2 tsp baking powder
- ¼ tsp salt
- ¾ cup unsweetened almond milk or skim milk
- 1 tsp vanilla extract
- 3 tbsp light butter, melted
Instructions
- Preheat oven to 350°F (175°C) and lightly spray a 9×13 baking dish with nonstick spray.
- Prepare peaches
In a saucepan over medium heat, cook peaches with the sugar substitute and cinnamon for about 5 minutes, until slightly softened. - Make the batter
In a bowl, whisk flour, brown sugar substitute, baking powder, and salt. - Add milk and vanilla extract and mix until smooth.
- Assemble
Pour melted light butter into the baking dish.
Pour batter over the butter without stirring. - Spoon the peach mixture evenly over the batter. Do not mix.
- Bake for 40–45 minutes until golden brown.
- Let cool 10 minutes before serving.
