protein bomb

Ingredients (1 serving):
• ¾ cup nonfat Greek yogurt
• ½ cup low-fat cottage cheese (blended smooth)
• 1 scoop vanilla protein powder
• 1 tbsp sugar-free cheesecake pudding mix
• ¼ cup fresh blueberries
• 2 tbsp crushed graham crackers (or low-fat graham crumbs)
• 2 tbsp sugar-free blueberry sauce or mashed blueberries
• Optional: a few extra blueberries for topping

Instructions:

  1. In a bowl, mix Greek yogurt, blended cottage cheese, protein powder, and pudding mix until smooth and creamy.
  2. Add graham cracker crumbs to the bottom of a small jar or cup.
  3. Spoon half of the cheesecake mixture over the crumbs.
  4. Add a layer of blueberries.
  5. Add the remaining cheesecake mixture.
  6. Top with blueberry sauce and extra blueberries.
  7. Chill for 10–15 minutes (optional) and enjoy!
