Ingredients
- 1 cup powdered erythritol or monk fruit sweetener (granulated style)
- ½ cup fat-free evaporated milk
- ½ cup fat-free sweetened condensed milk
- 1 tbsp light butter — 2 points total
- Pinch of salt
- 1 tsp vanilla extract (optional but recommended)

This lighter version keeps that signature feel by:

✔ allowing controlled crystallization during beating
✔ maintaining the traditional appearance
You still get that nostalgic Scottish sweet — just without the massive point count.
Preparation
Step 1 — Prepare the Pan
Line an 8×8 inch pan with parchment paper and lightly spray with cooking spray.
Step 2 — Heat the Base
In a saucepan combine:
- sweetener
- evaporated milk
- condensed milk
- light butter
- salt
Heat over medium heat, stirring constantly until fully melted and smooth.
Step 3 — Simmer
Bring mixture to a gentle boil.
Reduce heat and simmer 10–15 minutes, stirring frequently.
The mixture will thicken and turn lightly caramel-colored.
Target temperature: 235–240°F (soft-ball stage) if using a thermometer.
Step 4 — Flavor
Remove from heat and stir in vanilla.
Step 5 — Create the Tablet Texture
Beat with a hand mixer (or wooden spoon) for 5–8 minutes until:
- mixture thickens
- becomes slightly matte
- leaves trails when stirred
This step creates the iconic crumbly tablet texture.
Step 6 — Set
Pour into prepared pan and smooth gently.
After about 10 minutes, lightly score into squares.
Let set 2–3 hours or overnight before cutting.
