Ingredients

Cake

  • 1 box sugar-free white or yellow cake mix
  • 1 cup water
  • ½ cup unsweetened applesauce (replaces oil) — 0 points
  • 3 egg whites (instead of whole eggs) — 0 points
  • ¾ cup whole berry cranberry sauce (light or reduced sugar if possible)

Cream Cheese Swirl

  • 1 (8 oz) fat-free cream cheese, softened — 0 points
  • 2 tbsp light butter — 4 points total
  • 1 tsp vanilla extract
  • ¾ cup powdered erythritol or monk-fruit sweetener (instead of powdered sugar)

Topping

  • 1 cup pecans, roughly chopped (reduced amount for points control)
  • Instructions
    Step 1 — Prep
    Preheat oven to 350°F (175°C).
    Lightly grease a 9×13-inch baking dish.
    Spread chopped pecans evenly on the bottom.

    Step 2 — Make Cake Batter
    In a large bowl mix:
    cake mix
    water
    applesauce
    egg whites
    Mix until smooth and pour over pecans.

    Step 3 — Cream Cheese Swirl
    Beat together:
    fat-free cream cheese
    light butter
    vanilla
    Add powdered sweetener and mix until creamy.

    Step 4 — Assemble
    Drop spoonfuls of cream cheese mixture and cranberry sauce over batter.
    Lightly swirl using a knife — don’t overmix so you keep visible swirls.

    Step 5 — Bake
    Bake 45–50 minutes, until a toothpick comes out clean of raw batter.
    Cool at least 30 minutes before slicing.
