Healthy Weight Watchers Friendly Chicken Stir-Fry – About 4 Points Per Serving
This quick garlic soy chicken stir-fry is a perfect healthy dinner idea when you want something flavorful but still light. Tender chicken, crisp green beans, garlic, and ginger are tossed in a savory glossy sauce that tastes just like takeout — but much healthier.
It’s ready in about 25 minutes, making it a great weeknight meal for busy families.
Ingredients
- 2 boneless skinless chicken breasts, thinly sliced
- 3 cups fresh green beans, trimmed
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp honey
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- ½ tsp red pepper flakes (optional)
- 1 tsp cornstarch mixed with 1 tbsp water
- 2 green onions, sliced
- 1 tsp sesame seeds (optional)
- Salt and black pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken and cook for 4–5 minutes until lightly golden and cooked through. Remove from the pan and set aside.
- In the same skillet, add the green beans and stir-fry for about 4 minutes until they are tender-crisp and slightly blistered.
- Add the garlic and ginger and cook for about 30 seconds until fragrant.
- Return the chicken to the skillet and toss with the green beans.
- In a small bowl, whisk together soy sauce, oyster sauce, honey, and sesame oil.
- Pour the sauce over the chicken and vegetables and stir to coat evenly.
- Add the cornstarch slurry and cook for 1–2 minutes until the sauce thickens and becomes glossy.
- Sprinkle with red pepper flakes, green onions, and sesame seeds before serving.
Serving
Serve hot on its own or with:
