Friendly Creamy Garlic Parmesan Green Beans – Lightened Up Version

Getting the kids to finish their vegetables can sometimes feel impossible, but this lightened-up creamy garlic parmesan sauce makes green beans so delicious that everyone asks for seconds.

The garlic flavor really shines through, and the sauce tastes rich and creamy without being overly heavy. By swapping a few ingredients, this version stays Weight Watchers friendly while still tasting indulgent.


Ingredients

  • 1 lb fresh green beans, trimmed
  • 1 tbsp light butter (or regular butter)
  • 1 tbsp minced garlic
  • ½ cup light cream or half-and-half
  • ¼ cup grated parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Bring a pot of water to a boil and cook the green beans until they are bright green and tender-crisp (about 4–5 minutes).
  2. Drain well and set aside.
  3. In a large skillet, melt the butter over medium heat.
  4. Add the minced garlic and cook until fragrant (about 30 seconds).
  5. Pour in the light cream and let it simmer until it thickens slightly.
  6. Stir in the parmesan cheese, salt, and pepper until the sauce becomes smooth and creamy.
  7. Add the cooked green beans back to the skillet and toss until they are fully coated in the sauce.
