Crispy Air Fryer Roast Potatoes

Ingredients

  • 4–5 medium potatoes (Russet or Yukon Gold), diced
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder (optional)
  • ½ tsp paprika (optional)
  • Fresh herbs (parsley, rosemary, or thyme), optional

Instructions

  1. Wash and peel potatoes if desired, then cut into evenly sized bite-size pieces.
  2. Place potatoes in a large bowl. Add olive oil, salt, pepper, and seasonings.
  3. Toss well until everything is evenly coated.
  4. Preheat air fryer to 375–400°F (190–200°C).
  5. Add potatoes to the air fryer basket in a single layer (cook in batches if needed).
  6. Air fry for 15–20 minutes, shaking every 5–10 minutes for even crisping.
  7. Cook until golden and crispy outside and fork-tender inside.
  8. Garnish with fresh herbs and serve hot.
