This is one of those soups that looks like it took effort… but really you just dumped everything in and let it do its thing. It’s cozy, creamy, a little spicy, and somehow still low-point. The kind of dinner you eat and immediately text someone about.


🧺 Ultra Low-Point Version (Same Thick, Creamy Look 👀)

  • 4 (4 oz) chicken breasts OR 2 cups cooked shredded chicken – 0 points
  • 1 (14 oz) can petite diced tomatoes – 0 points
  • 1 (10 oz) can red enchilada sauce (check for lowest sugar) – 0 points
  • 1 (15 oz) can black beans, drained – 0 points
  • 1½ cups frozen corn (instead of 2 😉) – 0 points
  • 1 (4 oz) can diced green chiles – 0 points
  • 3 cups reduced sodium chicken broth – 0 points
  • 1 tbsp minced garlic – 0 points
  • 1 tbsp taco seasoning (low sodium if possible) – 0 points
  • 4 oz light cream cheese (instead of 6 oz) – 6 points
  • 4 tbsp nonfat plain Greek yogurt – 0 points
