Ingredients
For the Cheesecake Layer
- ¾ cup plain nonfat Greek yogurt
- 1 scoop vanilla protein powder
- 1 tbsp sugar-free vanilla cheesecake pudding mix
- 2 tbsp fat-free whipped topping (optional, for extra creaminess)
For the Jelly Center
- ½ cup prepared sugar-free clear gelatin, fully set and cut into small cubes
Instructions
Step 1: Make the Cheesecake Mixture
In a bowl, whisk together the Greek yogurt, protein powder, pudding mix, and whipped topping until smooth and thick.
Step 2: Fill the Molds
Spoon the mixture into 12 silicone mini cheesecake molds or a mini muffin pan lined with silicone cups.
Step 3: Add the Jelly Centers
Press a small cube of sugar-free gelatin into the center of each bite.
Cover the cubes completely with the remaining cheesecake mixture.
Step 4: Chill
Refrigerate for at least 1 hour, or until firm.
Step 5: Serve
Carefully remove from the molds and enjoy chilled.
