This naturally sweet strawberry jam is bursting with fresh berry flavor and thickened with chia seeds instead of loads of sugar. Perfect on toast, stirred into yogurt, or spooned over pancakes.

Ingredients

  • 4 cups fresh strawberries, hulled and sliced
  • 1 tbsp chia seeds
  • 1 tbsp fresh lemon or lime juice
  • 1 tsp vanilla extract (optional)
  • Sweetener to taste (optional, use your favorite zero-calorie sweetener)

Instructions

Step 1: Cook the Strawberries

Add strawberries to a medium saucepan over medium heat.

Cook for 10–15 minutes, stirring frequently and mashing the berries as they soften.

Step 2: Add Remaining Ingredients

Stir in the lemon or lime juice, chia seeds, vanilla extract, and sweetener if using.

Continue simmering for 3–5 minutes.

Step 3: Cool and Thicken

Remove from heat and allow the mixture to cool completely.

The chia seeds will naturally thicken the jam as it cools.

Step 4: Store

Transfer to a clean jar and refrigerate.

Store for up to 2 weeks.
