This High-Protein Low-Carb Coconut Bread is soft, fluffy, and naturally gluten-free. Made with coconut flour, eggs, and healthy fats, it’s perfect for toast, sandwiches, or enjoying warm with a light spread. The texture is moist yet sturdy, making it an excellent bread alternative for low-carb and WW lifestyles.
Ingredients
- 7 large eggs
- ½ cup coconut flour
- ½ cup light olive oil (or avocado oil)
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- ½ teaspoon xanthan gum (optional, for improved texture)
- 1 teaspoon apple cider vinegar (optional, for a lighter loaf)
Instructions
Step 1 – Prepare
Preheat your oven to 350°F (180°C).
Line an 8×4-inch loaf pan with parchment paper or lightly coat it with nonstick cooking spray.
Step 2 – Mix the Wet Ingredients
In a large mixing bowl, whisk the eggs until light and frothy.
Whisk in the olive oil and apple cider vinegar (if using).
Step 3 – Add the Dry Ingredients
In a separate bowl, combine:
- Coconut flour
- Salt
- Baking powder
- Xanthan gum
Gradually stir the dry ingredients into the egg mixture until fully incorporated.
The batter will become quite thick as the coconut flour absorbs moisture.
Let the batter rest for 3–5 minutes.
Step 4 – Bake
Transfer the batter to the prepared loaf pan and smooth the top.
Bake for 50–55 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out clean.
If the top begins to brown too quickly, loosely cover with foil during the last 15 minutes of baking.
Step 5 – Cool
Allow the bread to cool in the pan for 10 minutes.
Transfer to a wire rack and cool completely before slicing.
