This is one of those breakfasts I keep going back to when I want something warm and filling but don’t want a heavy meal first thing in the morning. I’ve found the best texture comes from cooking the egg very slowly and adding the cottage cheese only when the egg is almost finished. If you add it too early, the cottage cheese can release a lot of liquid and the whole bowl gets watery. I also like leaving a few little cottage cheese curds visible instead of stirring everything completely smooth—it makes it creamier and gives the bowl that soft, fluffy look. A generous amount of green onion and black pepper makes a surprisingly big difference too. And if I want a larger breakfast, I’ll add extra egg whites rather than another whole egg because it adds a lot more protein without really changing the Points.

Instructions

  1. Lightly coat a non-stick skillet with cooking spray and heat over medium-low heat.
  2. Whisk the egg with the optional egg whites, a little salt, black pepper, and garlic powder.
  3. Pour into the skillet and cook slowly, gently pushing the eggs toward the center as they begin to set.
  4. When the eggs are still slightly soft, add the fat-free cottage cheese.
  5. Fold everything together gently and cook for another 30–60 seconds. Don’t overcook it—you want the mixture soft and creamy.
  6. Transfer to a bowl.
  7. Top generously with chopped green onions, parsley or spinach, and another little sprinkle of black pepper.
  8. Serve immediately while warm.
