- 1 bag cauliflower rice (steamed & squeezed dry) – 0 pts
- 2 eggs – 4 pts
- ½ cup fat-free shredded mozzarella (melts best & keeps look) – 0 pts
- 2 tbsp finely chopped onion or green onion – 0 pts
Seasoning
- Garlic powder
- Smoked paprika
- Salt & pepper
- Chili flakes (optional heat 🌶️)

👩🍳 Instructions
1️⃣ Microwave cauliflower rice and squeeze out ALL moisture using a towel (this is the secret to crispiness).
2️⃣ Mix cauliflower, eggs, cheese, onion, and seasoning.
3️⃣ Shape into hash brown patties on parchment-lined baking sheet.
4️⃣ Bake at 400°F (200°C) for 12 minutes, flip, then bake another 12 minutes.
5️⃣ Broil 1 minute for golden top.
6️⃣ Spray lightly with cooking spray and pan-sear 1–2 minutes per side for that real hash brown crust.
