A light lemon cake that looks like a classic bakery bundt cake but uses a simple WW trick to keep points incredibly low.
Ingredients (Cake)
- 1 box (15.25 oz) lemon cake mix
- 5.3 oz lemon nonfat Greek yogurt
- 1 cup water
Optional Light Vanilla Lemon Glaze (Lower-Point Version)
(keeps same visual drizzle without heavy sugar)
- ½ cup powdered sugar substitute (swerve/confectioners monk fruit)
- 2 tbsp almond milk or skim milk
- 2 tbsp lemon juice
- ¼ tsp vanilla extract
Instructions
1️⃣ Preheat Oven
Preheat oven to 350°F (175°C).
Lightly grease a bundt pan.
2️⃣ Mix Batter
In a mixing bowl combine:
cake mix, Greek yogurt, and water.
Stir until smooth and lump-free.
3️⃣ Bake
Pour batter into prepared pan.
Bake 30 minutes, or until a toothpick comes out clean.
4️⃣ Cool
Let cake cool completely on a wire rack before removing from pan.
5️⃣ Optional Glaze
Whisk glaze ingredients until smooth and drizzle over cooled cake.
