Ultra Low-Point Chocolate Chip Snack Cake

🧺 Ingredients (12 pieces)

  • 1½ cups Kodiak mix (instead of 1¾)
  • ¼ cup mini chocolate chips
  • ⅓ cup zero-cal sweetener
  • ¾ cup unsweetened almond milk
  • ½ cup unsweetened applesauce (replaces oil 👀)
  • 1 egg
  • ½ tsp vanilla extract
  • ¼ tsp coconut extract
  • 1 tbsp finely chopped walnuts (just for the look on top)

👩‍🍳 Instructions

1️⃣ Preheat oven to 350°F. Spray an 8-inch square pan.

2️⃣ Mix dry ingredients (Kodiak mix, sweetener, chocolate chips).

3️⃣ Stir in almond milk, egg, applesauce, and extracts. Batter should be slightly thick but pourable.

4️⃣ Pour into pan. Lightly sprinkle walnuts on top so it still looks bakery-style.

5️⃣ Bake 12–15 minutes until toothpick comes out clean.

6️⃣ Cool and cut into 12 equal pieces.
