  • 500g extra-lean ground beef (96–99% lean) β€” approx. 16 points total
  • 1 medium zucchini, sliced into half-moons β€” 0 points
  • 2 medium sweet potatoes, diced small β€” 0 points
  • 1 small onion, diced β€” 0 points
  • 2 cloves garlic, minced β€” 0 points
  • 1 tsp olive oil (reduced from 1 tbsp) β€” 1 point
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Β½ tsp chili powder (optional)
  • Salt & pepper to taste
  • Fresh parsley for garnish

  1. Heat a large skillet over medium heat and add olive oil.
  2. Add sweet potato cubes first and cook 5–7 minutes until slightly softened.
  3. Add onion and garlic, cook until fragrant.
  4. Add ground beef and break apart while cooking.
  5. Stir in cumin, paprika, chili powder, salt, and pepper.
  6. Once beef is nearly cooked, add zucchini.
  7. Cook another 5–7 minutes until zucchini is tender and everything is nicely browned.
  8. Garnish with fresh parsley and serve.
