🥘 Ingredients
- 500g extra-lean ground beef (96–99% lean) — approx. 16 points total
- 1 medium zucchini, sliced into half-moons — 0 points
- 2 medium sweet potatoes, diced small — 0 points
- 1 small onion, diced — 0 points
- 2 cloves garlic, minced — 0 points
- 1 tsp olive oil (reduced from 1 tbsp) — 1 point
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp chili powder (optional)
- Salt & pepper to taste
- Fresh parsley for garnish
👩🍳 Instructions
- Heat a large skillet over medium heat and add olive oil.
- Add sweet potato cubes first and cook 5–7 minutes until slightly softened.
- Add onion and garlic, cook until fragrant.
- Add ground beef and break apart while cooking.
- Stir in cumin, paprika, chili powder, salt, and pepper.
- Once beef is nearly cooked, add zucchini.
- Cook another 5–7 minutes until zucchini is tender and everything is nicely browned.
- Garnish with fresh parsley and serve.
