🧇 Ingredients

For the Cornbread Waffles

  • 1 box Jiffy cornbread mix
  • 1 egg
  • Milk or water (just enough to reach pancake batter consistency)

For the Toppings

  • Canned chili (portion as desired)
  • Shredded lettuce
  • Diced tomato
  • Shredded cheese
  • Light sour cream (1 point for 2 tablespoons if using Aldi light version)

👩‍🍳 Instructions

  1. Preheat your waffle maker.
  2. In a bowl, mix:
    • Jiffy cornbread mix
    • 1 egg
    • Enough milk or water to create a smooth, pancake-like batter.
  3. Spray waffle maker lightly with cooking spray.
  4. Pour about ½ cup batter into waffle maker.
  5. Cook until golden and crisp (usually 3–5 minutes depending on your machine).
  6. Remove and repeat with remaining batter.

🥣 Assemble

  1. Place waffle on plate.
  2. Spoon warm chili over the top.
  3. Add lettuce, tomato, shredded cheese.
  4. Finish with light sour cream.

Serve warm and enjoy.
