I wasn’t about to boil pasta. I just wanted something warm, cheesy, and comforting. Threw this in a pan and somehow it tastes like Alfredo’s lighter, gym-going cousin.


🧺 Ultra Low-Point Version (Same Silky Sauce 👀)

  • ½ cup shredded skinless chicken breast – 0 points
  • ½ cup blended fat-free cottage cheese – 0 points
  • 2 tbsp grated Parmesan – 2 points
  • Splash low-sodium chicken broth – 0 points
  • 1–1½ cups roasted cauliflower florets – 0 points
  • Garlic + black pepper – 0 points

Optional upgrade:

  • 1 tsp light butter for extra gloss – 1 point

👩‍🍳 How To

1️⃣ Sauté chicken with garlic and pepper until warm.
2️⃣ Stir in blended cottage cheese + broth.
3️⃣ Add Parmesan and mix until smooth and creamy.
4️⃣ Fold in roasted cauliflower until coated.
5️⃣ Simmer 2–3 minutes on low until thick and silky.

It turns into that creamy, spoon-drag-through-the-pan texture.
