A lighter take on traditional Cornish pasties — still warm, flaky, and packed with savory filling, but adjusted so you can actually fit it into your day.
🧾 Ingredients
Filling
- 200 g leftover lean beef stew, drained well
- Salt & pepper, to taste
- 1 tsp mixed herbs
Pastry (Lightened Option)
- 500 g light pie crust dough (or reduced-fat pastry)
Finish
- Egg wash (1 egg beaten or egg white for fewer points)
Equipment
- Air fryer
- Pasty maker or round cutter
👩🍳 Instructions
1️⃣ Prepare Filling
- Place drained beef stew into a bowl.
- Season with salt, pepper, and mixed herbs.
- Make sure excess liquid is removed so the pastry stays crisp.
2️⃣ Cut Pastry
- Roll out pastry on a lightly floured surface.
- Cut 3 large circles using a pasty cutter or bowl.
3️⃣ Assemble Pasties
- Place pastry circle into the pasty maker.
- Add filling to one half (don’t overfill).
- Fold and seal to create the classic pasty shape.
4️⃣ Prepare for Air Fryer
- Line air fryer basket with foil or parchment.
- Brush tops lightly with egg wash.
5️⃣ Air Fry
Cook at 400°F (200°C) for 8 minutes, until golden and heated through.
6️⃣ Serve
Let cool slightly before serving — filling will be hot.
