Ingredients
- 1 box (0.3 oz) sugar-free strawberry gelatin — 0 Points
- 1 cup boiling water
- 1 cup cold water
- ½ cup fresh strawberries, diced — 0 Points
- ½ cup seedless grapes, halved — 0 Points
- ½ cup fresh pineapple, diced small — 0 Points
- ½ cup cantaloupe or honeydew, diced — 0 Points

Instructions
- Pour the sugar-free strawberry gelatin powder into a medium bowl.
- Add 1 cup boiling water and stir for about 2 minutes, until completely dissolved.
- Stir in 1 cup cold water.
- Divide the diced strawberries, grapes, pineapple, and melon evenly between 4 small glasses or dessert cups.
- Carefully pour the prepared gelatin over the fruit until each cup is nearly full.
- Refrigerate for 3–4 hours, or until completely set.
- Serve chilled straight from the refrigerator.

I’ve found these come out much better when the fruit is cut into really small pieces. You get a little fruit in almost every spoonful instead of big chunks sinking to the bottom. I also like making them the night before because the gelatin gets perfectly firm and the fruit stays really refreshing.
