- 1 lb boneless, skinless chicken breast, cooked and shredded — 0 Points
- 1 can (14.5 oz) diced tomatoes, undrained — 0 Points
- 1 can (15 oz) black or pinto beans, rinsed and drained — 0 Points
- ½ cup frozen corn — about 2 Points total
- 2 cups fat-free chicken broth — 0 Points
- 1 tbsp taco seasoning — about 1–2 Points
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper, to taste
- Chopped cilantro, optional
- Cooking spray — 0 Points

Instructions
- Lightly coat a medium pot with cooking spray and place over medium heat.
- Add the shredded chicken, diced tomatoes, beans, corn, chicken broth, taco seasoning, garlic powder, and onion powder.
- Stir everything together and bring to a gentle boil.
- Reduce the heat and simmer uncovered for 15–20 minutes, stirring occasionally.
- Taste and add salt, pepper, or a little extra taco seasoning if needed.
- Spoon into bowls and finish with chopped cilantro if you like. Serve hot.

I like letting this sit for about 10 minutes after turning off the heat. The broth thickens just a little from the beans, and it ends up tasting much richer than you’d expect from such a low-point soup. It’s also one of those recipes that tastes even better the next day.
