Ingredients

  • 1 lb boneless, skinless chicken breast, cooked and shredded — 0 Points
  • 1 can (14.5 oz) diced tomatoes, undrained — 0 Points
  • 1 can (15 oz) black or pinto beans, rinsed and drained — 0 Points
  • ½ cup frozen corn — about 2 Points total
  • 2 cups fat-free chicken broth — 0 Points
  • 1 tbsp taco seasoning — about 1–2 Points
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • Chopped cilantro, optional
  • Cooking spray — 0 Points

Instructions

  1. Lightly coat a medium pot with cooking spray and place over medium heat.
  2. Add the shredded chicken, diced tomatoes, beans, corn, chicken broth, taco seasoning, garlic powder, and onion powder.
  3. Stir everything together and bring to a gentle boil.
  4. Reduce the heat and simmer uncovered for 15–20 minutes, stirring occasionally.
  5. Taste and add salt, pepper, or a little extra taco seasoning if needed.
  6. Spoon into bowls and finish with chopped cilantro if you like. Serve hot.

I like letting this sit for about 10 minutes after turning off the heat. The broth thickens just a little from the beans, and it ends up tasting much richer than you’d expect from such a low-point soup. It’s also one of those recipes that tastes even better the next day.
