This is one of those ridiculously simple snacks I keep coming back to because it actually fills me up instead of making me want another snack ten minutes later. I like using the cottage cheese straight from the fridge and a chunky salsa with plenty of tomato and pepper pieces because it gives the bowl much more texture. Don’t completely mix the salsa in at first—just swirl it through the cottage cheese a little. That way some bites are creamy and mild and others have a stronger salsa flavor. If I’m extra hungry, I’ll add a little chopped red onion, cilantro, or jalapeño because those make it feel much more like an actual meal without really changing the Points. Definitely scan your salsa, though; I’ve noticed some jars that look almost identical can calculate differently.
Ingredients
- 1 cup fat-free cottage cheese — 0 Points if it’s a ZeroPoint food on your plan
- ¼ cup chunky salsa — 0–1 Point, depending on brand
- 1 tbsp finely diced red onion — optional
- Chopped cilantro — optional
- Jalapeño, diced — optional
- Black pepper, to taste
Total: approximately 0–1 WW Point
Instructions
- Spoon the fat-free cottage cheese into a bowl.
- Add the salsa over the top.
- Add red onion, cilantro, jalapeño, or black pepper if desired.
- Lightly stir everything together, leaving a few visible streaks of salsa throughout the cottage cheese.
- Eat immediately with a spoon, or chill it for a few minutes first if you like it extra cold.
