Ingredients
Crust
- 1 cup self-rising flour
- ¾ cup fat-free Greek yogurt
- 1 tbsp light butter, melted
- 1 tsp vanilla extract
Filling
- ⅓ cup brown sugar substitute (monk fruit or Swerve Brown)
- 2 tbsp light butter
- ¼ cup fat-free half-and-half
- 1 egg
- 1 tsp vanilla
- ½ cup chopped pecans
Instructions
1️⃣ Preheat oven
Preheat oven to 350°F (175°C) and line an 8×8 baking dish with parchment.
2️⃣ Make the crust
Mix flour, Greek yogurt, melted butter, and vanilla until dough forms.
Press evenly into the baking dish.
Bake 8–10 minutes until lightly set.
3️⃣ Make the filling
In a bowl whisk:
- brown sweetener
- egg
- half-and-half
- melted butter
- vanilla
Stir in pecans.
4️⃣ Bake the bars
Pour filling over the crust and bake 18–22 minutes until set.
5️⃣ Cool completely
Let bars cool before slicing into squares.
