🧺 Ingredients (1 flatbread / 2 servings)
Flatbread Base
- 1 cup fat-free cottage cheese – 0 pts
- 2 large eggs – 4 pts
- 2 tbsp reduced-fat parmesan (instead of 1/8 cup) – 1 pt
- 1 tsp garlic powder – 0 pts
Toppings (keep pizza look 👀)
- 2 tbsp pizza sauce (no sugar added) – 0 pts
- ½ cup part-skim mozzarella – 4 pts
- Turkey pepperoni slices – 2 pts
- Black olives – 0 pts
👩🍳 Instructions
1️⃣ Blend cottage cheese, eggs, parmesan, and garlic until completely smooth.
2️⃣ Pour onto parchment-lined baking sheet and spread into a thin pizza shape.
3️⃣ Bake at 400°F (200°C) for about 35–40 minutes until golden and firm.
4️⃣ Let cool 5–10 minutes (THIS makes it hold like real crust).
5️⃣ Add sauce, cheese, pepperoni, olives.
6️⃣ Bake again 4–5 minutes until cheese melts.
