Base

  • 500โ€“600g potatoes, peeled and thinly sliced โ€” 0 points
  • 1โ€“2 medium onions, thinly sliced โ€” 0 points

Cheese Layer

  • 200g reduced-fat mature cheddar (slightly reduced from 240g) โ€” approx. 20 points total

Liquid Filling

  • 300ml skimmed milk โ€” 3 points
  • 2 large eggs โ€” 4 points
  • Salt & pepper
  • Optional: pinch mustard powder or splash Worcestershire sauce

Pastry Alternative

  • 4 sheets filo pastry (approx. 80g total) โ€” 8โ€“10 points
    (or 2โ€“3 WW white wraps for similar points)

Topping

  • 2 tomatoes, sliced โ€” 0 points
  • Low-calorie cooking spray

๐Ÿ‘ฉโ€๐Ÿณ Instructions

1. Prep the Veg

Boil potatoes until just tender (not mushy). Drain and set aside.

Sautรฉ onions in cooking spray until soft and golden.


2. Make the Egg Mix

Whisk together:

  • skim milk
  • eggs
  • salt & pepper
  • optional mustard powder or Worcestershire

3. Assemble

Preheat oven to 180ยฐC / 350ยฐF.

Line pie dish with filo sheets, lightly spraying between layers.

Layer:

  1. Potatoes
  2. Onions
  3. Cheese

Repeat if needed.


4. Pour & Top

Pour egg mixture evenly over the pie.

Arrange sliced tomatoes on top.


5. Bake

Bake 30โ€“40 minutes until:

  • golden on top
  • center set
  • edges slightly crisp

Rest 5โ€“10 minutes before slicing.
