🧁 Ingredients

Loaf
• 1 cup self-rising flour
• ½ cup granulated sweetener (or ¼ cup sugar — adjust points)
• ½ cup unsweetened applesauce
• 1 large egg
• ¼ cup nonfat Greek yogurt
• 1 tsp vanilla extract
• ¾ cup fresh or frozen blueberries

Cream Cheese Swirl
• 3 oz light cream cheese, softened
• 2 tbsp sweetener (or sugar)
• 1 tsp vanilla
• 1–2 tbsp nonfat Greek yogurt (to loosen)

👩‍🍳 Instructions

  1. Preheat oven to 175°C / 350°F.
    Line a small loaf pan with parchment.
  2. Make loaf batter:
    Mix egg, applesauce, yogurt, vanilla, and sweetener.
    Stir in flour until just combined.
    Fold in blueberries gently.
  3. Make cream cheese swirl:
    Beat cream cheese, sweetener, vanilla, and yogurt until smooth.
  4. Assemble:
    • Pour half the batter into pan
    • Add cream cheese mixture
    • Top with remaining batter
    • Swirl lightly with a knife
  5. Bake 40–50 minutes until golden and set.
    Cool before slicing (hardest part 😅).
