Ingredients:

  • 2 cups Kodiak Power Cakes Mix (Buttermilk)
  • ½ teaspoon baking powder
  • 2 apples (grated)
  • ½ cup Fairlife Lowfat Milk
  • 1 large egg
  • ¼ cup sugar-free maple syrup
  • ¼ cup unsweetened applesauce
  • ½ teaspoon cinnamon
  • ½ teaspoon apple pie spice
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon-sugar for topping

Directions:

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Grease 12 standard-size muffin cups (silicone baking cups work best, do not use paper liners).

  2. Prepare the Apples:
    Grate the apples over a large bowl.

  3. Mix Ingredients:
    Add the Kodiak Power Cakes Mix, baking powder, Fairlife Lowfat Milk, egg, sugar-free maple syrup, unsweetened applesauce, cinnamon, apple pie spice, and vanilla extract to the bowl with the grated apples. Mix until just combined.

  4. Fill Muffin Cups:
    Fill the muffin cups using a large ice cream scoop or spoon. Sprinkle with cinnamon-sugar.

  5. Bake:
    Bake at 400°F for 10 minutes. Lower the oven temperature to 350°F (175°C) and bake for an additional 6-8 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool:
    Cool muffins on a wire rack.
