Ingredients
- 2 cups fresh spinach, finely chopped — 0 points
- ¾ cup reduced-fat feta, crumbled — 5–6 points total
- ¼ cup almond flour (reduced amount) — 4 points total
- 1 large egg white (instead of whole egg) — 0 points
- Cooking spray (instead of olive oil) — 0 points
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- Optional: pinch red pepper flakes
Why This Version Works
Original points mainly come from:
❌ full-fat feta
❌ almond flour
❌ olive oil
❌ whole egg
We lighten it by:
✔ using reduced-fat feta
✔ cutting almond flour in half (just enough for structure)
✔ removing oil and using spray
✔ swapping whole egg → egg white
You still get:
- Crispy edges
- Salty feta flavor
- Soft center
- Snackable texture
Instructions
Step 1 — Prep
Preheat oven to 375°F (190°C).
Line baking sheet with parchment and lightly spray.
Step 2 — Mix
In a bowl combine:
- chopped spinach
- feta
- almond flour
- egg white
- garlic powder
- salt & pepper
Mix until evenly combined.
Step 3 — Shape
Scoop tablespoon-sized portions onto baking sheet.
Flatten slightly with the back of a spoon.
Step 4 — Bake
Bake 15–18 minutes until golden and crispy on edges.
Cool 5 minutes before serving (they firm up more as they cool).
