Low-Point Spinach Feta Crisps (WW Friendly)

Ingredients

  • 2 cups fresh spinach, finely chopped — 0 points
  • ¾ cup reduced-fat feta, crumbled — 5–6 points total
  • ¼ cup almond flour (reduced amount)4 points total
  • 1 large egg white (instead of whole egg) — 0 points
  • Cooking spray (instead of olive oil) — 0 points
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: pinch red pepper flakes

Why This Version Works

Original points mainly come from:
❌ full-fat feta
❌ almond flour
❌ olive oil
❌ whole egg

We lighten it by:

✔ using reduced-fat feta
✔ cutting almond flour in half (just enough for structure)
✔ removing oil and using spray
✔ swapping whole egg → egg white

You still get:

  • Crispy edges
  • Salty feta flavor
  • Soft center
  • Snackable texture

Instructions

Step 1 — Prep

Preheat oven to 375°F (190°C).
Line baking sheet with parchment and lightly spray.


Step 2 — Mix

In a bowl combine:

  • chopped spinach
  • feta
  • almond flour
  • egg white
  • garlic powder
  • salt & pepper

Mix until evenly combined.


Step 3 — Shape

Scoop tablespoon-sized portions onto baking sheet.
Flatten slightly with the back of a spoon.


Step 4 — Bake

Bake 15–18 minutes until golden and crispy on edges.

Cool 5 minutes before serving (they firm up more as they cool).

Pro Tips

  • Squeeze excess moisture from spinach if very wet.
  • Want extra crisp? Broil last 1–2 minutes.
