WW-Friendly Cinnamon Sugar Crispy Bites

Ingredients

  • 6 small low-carb or high-fiber tortillas, preferably 1 Point each
  • Nonstick butter-flavored cooking spray
  • ¼ cup zero-calorie granulated sweetener
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon vanilla powder or a few drops vanilla extract, optional
  • Tiny pinch of salt

Instructions

  1. Preheat your air fryer to 350°F (175°C) for about 3 minutes. If you prefer using the oven, preheat it to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. Stack the tortillas on a cutting board and cut each one into small irregular squares or rectangles. They don’t need to be perfectly even. In fact, slightly uneven pieces give them that homemade snack look once they crisp up.
  3. Separate all the pieces so none are sticking together.
  4. In a small bowl, mix the zero-calorie sweetener, cinnamon, and tiny pinch of salt.
  5. Place the tortilla pieces in a large mixing bowl and mist them very lightly with butter-flavored nonstick spray.
  6. Toss with your hands, spray once more if necessary, and make sure every piece has just enough moisture for the cinnamon mixture to stick. Avoid soaking them with spray because too much moisture can prevent them from getting really crisp.
  7. Sprinkle about half of the cinnamon-sweetener mixture over the pieces.
  8. Toss thoroughly, then add the remaining mixture and toss again. Doing this in two stages helps distribute the coating more evenly.
  9. Arrange the pieces in the air fryer basket in a mostly single layer. A little overlap is okay, but don’t pile them deeply on top of each other.
  10. Air fry for 4 minutes, then shake the basket well.
  11. Continue cooking for another 2–4 minutes, shaking every 1–2 minutes, until the pieces are dry, crisp, and lightly golden.
  12. Keep a close eye on them during the last couple of minutes. Thin tortilla pieces can go from pale to overly dark very quickly.
  13. Transfer the finished pieces to a cooling rack or large plate.
  14. While they’re still hot, give them one very light mist of cooking spray and sprinkle with a little additional cinnamon sweetener if you want the visible sugary coating shown in the photo.
  15. Let them cool completely for 10–15 minutes. They become noticeably crispier as they cool, so don’t worry if they feel slightly flexible immediately after leaving the air fryer.
  16. Repeat with the remaining pieces if your air fryer basket is too small to cook everything at once.
  17. Once completely cool, store them in an airtight container at room temperature.
  18. For the best texture, eat within 3–4 days.

Oven Method

Spread the coated pieces in a single layer over a parchment-lined baking sheet.

Bake at 375°F for about 8–12 minutes, turning them once halfway through.

Remove any pieces that brown early and let the rest continue cooking until crisp.

Cool completely before storing.

The biggest thing I’ve learned making these is that they don’t always feel fully crispy the second they come out of the air fryer. The first time I made a batch, I thought they were undercooked and kept putting them back in for another minute. By the time they cooled, half of them were almost too hard 😂 Now I pull them when the edges are lightly golden and the centers still have just the tiniest bit of flexibility. After ten minutes on the counter, they crisp up beautifully.

I also wouldn’t use too much cooking spray. You really just need enough for the cinnamon coating to grab onto the surface. When I sprayed them too heavily, they tasted fine but stayed slightly chewy instead of getting that dry, crunchy texture. A quick mist, toss, and another tiny mist if needed is plenty.

Another thing that helps is cutting the pieces fairly small. Bigger triangles are great if you want something like dessert nachos, but these little squares are much easier to portion and snack on. A serving looks surprisingly generous once everything is cut into small pieces, which is always nice when you’re trying to stretch Points.

The cinnamon mixture is easy to adjust too. I like mine pretty cinnamon-heavy, especially because zero-calorie sweetener can sometimes taste extra sweet on its own. The cinnamon and tiny pinch of salt balance it out and make the coating taste more like classic cinnamon sugar.

For storage, make absolutely sure they’re completely cool before putting the lid on the container. Even a little trapped steam can soften them overnight. If that happens, they’re not ruined—just toss them back into the air fryer for 1–2 minutes at 325°F, cool again, and they usually crisp right back up.

These are especially good when I want something crunchy after dinner but don’t necessarily want another creamy dessert. They feel like a real snack, take a while to eat, and you can make a big container at once.
