Creamy Spicy Chicken & Avocado Salad

Ingredients

For the Chicken

  • 1½ lbs boneless, skinless chicken breast, cut into bite-size pieces
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili powder
  • Nonstick cooking spray
  • 1 tablespoon fresh lemon or lime juice

For the Salad

  • 6 cups mixed lettuce or chopped romaine
  • 1 large cucumber, sliced into half-moons
  • 1½ cups cherry tomatoes, halved
  • 1 medium avocado, cut into chunks
  • 1 large carrot, shaved into thin ribbons
  • ½ small red onion, very thinly sliced
  • 2 tablespoons chopped fresh parsley or cilantro

For the Creamy Spicy Dressing

  • ¾ cup nonfat plain Greek yogurt
  • 1 tablespoon light mayonnaise
  • 1½ tablespoons sugar-free ketchup
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1–2 teaspoons sriracha or hot sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon onion powder
  • 1–2 tablespoons unsweetened almond milk or water
  • Salt and black pepper, to taste

Instructions

  1. Start with the chicken. Pat the chicken breast dry with paper towels and cut it into fairly large bite-size pieces.
  2. Add the chicken to a bowl and season with the paprika, garlic powder, onion powder, oregano, salt, black pepper, and chili powder.
  3. Toss everything together until the chicken is evenly coated.
  4. Heat a large nonstick skillet over medium-high heat and coat it lightly with nonstick cooking spray.
  5. Add the chicken in a single layer. Avoid crowding the pan because the pieces will steam instead of developing the browned edges you want.
  6. Cook for about 4 minutes without moving it too much, then turn the pieces and cook another 3–4 minutes, until golden and cooked completely through.
  7. Remove the skillet from the heat and squeeze the fresh lemon or lime juice over the chicken.
  8. Transfer the chicken to a plate and let it rest while you prepare the salad. It can be served warm or completely chilled.
  9. For the dressing, whisk together the Greek yogurt, light mayonnaise, sugar-free ketchup, lime juice, Dijon mustard, sriracha, garlic powder, paprika, onion powder, salt, and black pepper.
  10. Add almond milk or water 1 teaspoon at a time until the dressing becomes creamy and easily drizzleable. Keep it fairly thick so it clings to the chicken and vegetables instead of collecting at the bottom of the bowl.
  11. Place the mixed lettuce in a large serving bowl.
  12. Add the cucumber, cherry tomatoes, carrot ribbons, red onion, and chopped herbs.
  13. Add the avocado chunks gently so they don’t get mashed while tossing.
  14. Arrange the cooked chicken over the top.
  15. Drizzle about half of the creamy spicy dressing over the salad.
  16. Toss very lightly or leave the ingredients arranged in sections and drizzle the remaining dressing over the top.
  17. Finish with additional black pepper, lime juice, or a tiny bit more hot sauce if you want extra heat.
  18. Serve immediately for the best texture.

I’ve made versions of this salad where I tried to cut the Points so aggressively that I left out the avocado completely, and honestly I don’t think it’s worth doing that. A measured amount of avocado gives the salad that creamy bite that makes it feel like an actual meal instead of just chicken sitting on lettuce. I’d much rather keep a reasonable amount and bulk the bowl up with cucumber, tomatoes, lettuce, and carrot.

The other thing I’ve learned is not to drown the salad in dressing right away. This dressing is thick enough that a little goes much farther than you expect, especially once you start tossing everything. I usually drizzle half over the bowl, toss it, and then decide if I actually need the rest. Most of the time I save a little for the next day.

I also really like letting the chicken cool for five or ten minutes before putting it on the salad. If it goes straight from the skillet onto the lettuce, the greens start wilting underneath. Slightly warm chicken still gives you that nice fresh-versus-warm contrast without turning the bottom of the bowl soggy.

For meal prep, I keep everything separate. The chicken goes in one container, the vegetables in another, the avocado gets cut right before eating, and the dressing stays in a little jar. That sounds like extra work, but it means the salad still tastes freshly made two days later. If you put the whole thing together the night before, the cucumber and tomato release water and the lettuce loses that crisp texture.

And if the dressing thickens in the refrigerator, don’t add more mayonnaise. Just stir in a teaspoon of water or almond milk and it comes right back to the perfect consistency. I also like adding an extra squeeze of lime right before eating because it brightens the whole bowl and makes the creamy dressing taste lighter.
