Ingredients

Scones

  • 2 cups all-purpose flour
  • 3 Tbsp granulated sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, diced
  • 1 large egg, cold, lightly beaten
  • 1/2 cup cold heavy cream (or light cream)
  • 1 tsp vanilla extract
  • 1 cup blueberries
  • 1 Tbsp coarse sugar (for topping)

Lemon Glaze

  • 2/3 cup powdered sugar
  • Zest of 1 lemon
  • 1 Tbsp fresh lemon juice (more if needed)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter (or two knives) until the mixture forms pea-sized crumbs.
  4. Gently fold in the blueberries. Refrigerate while preparing the wet ingredients.
  5. In a small bowl, whisk together the cream, egg, and vanilla. Fold into the flour mixture just until moistened. If too dry, add 1 Tbsp cream; if too wet, sprinkle a little flour.
  6. Transfer dough to a lightly floured surface. Form a ball, then flatten into a 1-inch thick, 7-inch wide disk. Cut into 8 wedges.
  7. Place scones on the lined baking sheet at least 1 inch apart. Brush tops with 2 Tbsp cream and sprinkle coarse sugar. Chill in the fridge for 15 minutes.
  8. Bake 20–23 minutes until golden brown and centers are set. Cool completely on a rack.
  9. For the glaze: combine powdered sugar, lemon zest, and lemon juice. Adjust consistency as needed. Drizzle over cooled scones.

  • Avoid overworking the dough to maintain a tender, moist center.
  • Use frozen blueberries if needed, but fold them in frozen to avoid coloring the dough.
  • Scones can be made ahead, stored in airtight containers, or frozen (baked or unbaked).
