Ingredients
- 1lb homemade ground chicken (or store-bought)
- 1 bag (16 oz) Great Value peppers & onions blend (frozen or fresh)
- 2 bags (10 oz each) cauliflower rice
- 1 can (10 oz) Great Value fire-roasted taco sauce
- 2 cans (15 oz each) black beans, drained and rinsed
- 2 cans (15 oz each) Mexican corn, drained
- 2 cans (4 oz each) diced green chilies
- Seasonings of your choice (e.g., chili powder, cumin, garlic powder, onion powder, salt, pepper)
- 3 tablespoons Walden Farms Street Taco
Sauce (Queso variety)
Instructions
- Preheat Oven: Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook Ground Chicken: In a large skillet over medium heat, cook the ground chicken until fully cooked, breaking it apart as it cooks.
- Add Vegetables: Add the peppers & onions blend to the skillet. Cook until the vegetables are softened, about 5-7 minutes.
- Combine Ingredients: Stir in the cauliflower rice, fire-roasted taco sauce, black beans, Mexican corn, and diced green chilies. Mix well to combine.
- Season: Add your chosen seasonings to taste, ensuring the mixture is well-flavored.
- Assemble Casserole: Transfer the mixture to the prepared baking dish, spreading it out evenly.
- Add Sauce: Drizzle the Walden Farms Street Taco Sauce (Queso variety) evenly over the top of the casserole.
- Bake: Cover the dish with aluminum foil and bake for 25-30 minutes, or until heated through and bubbly around the edges.
- Brown Top: Remove the foil and bake for an additional 5-10 minutes, or until the top is lightly browned.
