WW-Friendly Stuffed Bell Peppers with Cheese

Ingredients:

  • 4 medium bell peppers (red or yellow), tops cut off, seeds removed – 0 points
  • 1 lb 99% lean ground turkey0 points
  • 1/2 cup cooked brown rice3 points
  • 1/2 cup chopped onion0 points
  • 1/2 cup no-sugar-added tomato sauce0 points
  • 1/2 tsp garlic powder, 1/2 tsp oregano, salt & pepper – 0 points
  • 1/2 cup reduced-fat shredded mozzarella4 points
  • Cooking spray for the pan – 0 points

🍽️ Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Lightly spray a pan and sauté onions for 2–3 minutes. Add ground turkey and cook until browned.
  3. Stir in cooked rice, tomato sauce, and seasonings. Simmer for 2–3 minutes.
  4. Stuff each bell pepper evenly with the mixture and place them in a baking dish.
  5. Top each pepper with 2 tbsp reduced-fat cheese.
  6. Bake uncovered for 30–40 minutes, until the peppers are soft and cheese is bubbly and golden.
