These WW Chocolate Rice Krispie Balls are a quick, easy, and Weight Watchers-friendly dessert that perfectly combines a sweet chocolate flavor with a crispy texture.
INGREDIENTS. 1.8 ounces (225g) semi-sweet chocolate
2. ½ teaspoon vanilla extract
3. 2 cups mini marshmallows:
4. 2 cups Rice Krispie cereal
INSTRUCTIONS
- Melt the chocolate: In a heavy-bottomed saucepan, melt the semisweet chocolate over low-medium heat.Stir frequently to prevent the chocolate from burning. Melting the chocolate slowly ensures a smooth, glossy finish for your chocolate Rice Krispie balls.
- Add vanilla and marshmallows: Once the chocolate has melted, stir in the vanilla extract. Then, add the mini marshmallows and continue to stir untilthey’ve melted completely into the chocolate. The marshmallows will add a gooey texture, making these treats extra delicious.
- Incorporate the Rice Krispies: Remove the pot from the heat, and immediately fold in the Rice Krispie cereal. Stir gently but thoroughly to ensure all the cereal is coated in the chocolate marshmallow mixture.
- Shape the mixture into balls: Using a spoon or your hands, shape the mixture into six even-sized balls. Press them firmly to ensure they hold their shape.
- Chill and set: Place the balls on a sheet of parchment paper and refrigerate them for about 30 minutes, or until they are fully set.
