Weight Watchers Lemon Muffins

I made this lemon muffins for my sons each is 2 point. So delicious this is my favorite

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup self-rising flour
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1/2 cup unsweetened applesauce (as a substitute for oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup non-fat Greek yogurt
  • 1/4 cup water
  • Cooking spray (for greasing)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.
  2. In a mixing bowl, whisk together the all-purpose flour, self-rising flour, granulated sugar, baking powder, baking soda, salt, and lemon zest.
  3. In another bowl, combine the lemon juice, unsweetened applesauce, eggs, vanilla extract, Greek yogurt, and water. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake in the preheated oven for about 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Baking times may vary depending on your oven, so keep an eye on them.
  7. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
