I made this lemon muffins for my sons each is 2 point. So delicious this is my favorite
Ingredients:
- 1 cup all-purpose flour
- 1 cup self-rising flour
- 1/2 cup granulated sugar (adjust to taste)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 1/2 cup unsweetened applesauce (as a substitute for oil)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup non-fat Greek yogurt
- 1/4 cup water
- Cooking spray (for greasing)
Instructions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.
- In a mixing bowl, whisk together the all-purpose flour, self-rising flour, granulated sugar, baking powder, baking soda, salt, and lemon zest.
- In another bowl, combine the lemon juice, unsweetened applesauce, eggs, vanilla extract, Greek yogurt, and water. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Divide the batter evenly among the prepared muffin cups.
- Bake in the preheated oven for about 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Baking times may vary depending on your oven, so keep an eye on them.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
