This Weight Watchers Black Forest Baked Oatmeal is easy to make and delicious, I eat it for breakfast, but it’s like dessert. Only 2 points per serving
Ingredients
- 4 cups (320g) of old-fashioned oats
- 1/3 cup unsweetened cocoa powder
- 1/3 cup Stevia
- One ½ cup (360mL) of unsweetened vanilla almond milk
- 2 cups (492g) of unsweetened applesauce
- ½ cup (124g) sugar-free chocolate syrup
- 4 large eggs
- 1 tablespoon pure vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 cups frozen dark sweet cherries
Glaze:
- 9 ounces of nonfat Greek yogurt
- 2 tablespoons unsweetened cocoa powder
- 3 tablespoons Stevia
- 1 tablespoon (15g) sugar-free chocolate syrup
- 1 teaspoon pure vanilla extract
- ¼ teaspoon cherry extract
Instructions
- Preheat the oven to 350 degrees.
- Apply cooking spray to a 9″ x 13″ glass baking dish.
- Combine oats, cocoa powder, Stevia, almond milk, applesauce, chocolate syrup, eggs, vanilla, baking powder, salt, and cherries In a mixing bowl.
- Pour into the prepared baking dish.
- Bake for 40 minutes or until set.
Glaze:
- Combine all ingredients; refrigerate.
- Keep in the refrigerator until one week.
- Serve warm or cold with a dollop of glaze.
- I personally microwave one piece on HIGH for 30 seconds.
- Top with sugar-free chocolate syrup, 5 g of fat-free Reddi Wip and maraschino cherry, if desired.
