Weight Watchers Baked Chicken Fajitas

I love fajitas, and I love easy meals. And these Weight Watchers Baked Chicken Fajita Recipe is a lifesaver for me.

Ingredients

  • 1 pound of boneless skinless chicken breasts, cut into strips
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 1 ripe tomato, cubed
  • 1 tablespoon cumin
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder (optional)

Instructions

  1. Preheat the oven to 375 degrees.
  2. Spray a medium casserole dish with non-stick spray.
  3. Mix seasonings in a small bowl.
  4. Cut chicken into strips and coat well with a seasoning blend.
  5. In the bottom of the casserole dish, place a single layer.
  6. Top with vegetables.
  7. Finally, bake at 375 degrees for 35 to 40 minutes.
