Ingredients & Points (Serves 3–4):

  • 6 cups Watermelon, cubed – 0 pts
  • 1 English cucumber, thinly sliced – 0 pts
  • Juice & zest of 1 lime0 pts
  • 1 handful fresh mint, chopped – 0 pts
  • Sea salt flakes & black pepper, to taste – 0 pts
  • 6 oz feta cheese (light version preferred) – 5–6 pts

Total: ~5–6 pts for the full bowl
Per Serving: ~2 pts if shared among 3
Use reduced-fat feta or less of it to make it even lighter!


🥣 Instructions:

  1. Prep the Produce:
    • Cube your watermelon.
    • Slice cucumber into thin rounds or half-moons.
    • Chop fresh mint leaves.
  2. Combine Everything:
    • In a large bowl, mix watermelon, cucumber, and mint.
    • Crumble the feta cheese over the top.
