- Tomato
- 1 cup s
- Red onion
- 1 cup s
- Bell pepper
- 1 cup s
- Marketside Fresh spinach
- 1 cup s, Chopped
- OPTIONAL Fat free Shredded cheese
- 1 cup
- cooking spray
Instructions
- Coat a small ovenproof skillet with cooking spray and heat. Add spinach, red pepper and tomato and cook until tender.
- Combine eggs in a small bowl. Stir into vegetables, reduce heat and cook until eggs are firm.
- Place skillet under a preheated broiler and cook until top is browned. Serve immediately.
