Two Minute Protein Brownie (Gluten Free, Single-Serve)

This Protein Brownie is gluten free, single-serve, and comes together in two minutes! It’s incredibly chocolatey, fudgy, and delicious and to make it even better, it’s high in protein, low sugar, and has minimal ingredients. Next time you’re having a chocolate craving and need a quick fix, you’ll want to give this recipe a try!

Ingredients

  • 1 egg
  • 1/3 cup Greek yogurt
  • 1 tbsp sweetener of choice (see above for examples)
  • 3 tbsp cocoa powder (or cacao)
  • 1 tbsp chocolate protein powder
  • chocolate chips (add as many as you like!

Instructions

  • Mix all ingredients except for chocolate chips until smooth. Then add chocolate chips and mix again. 
  • Lightly grease a small microwave safe dish. Pour the batter into the dish. 
  • Microwave for 90 seconds for a lava cake consistency or up to 120 seconds for a firmer brownie. 
  • Add toppings of choice and enjoy!
