Summer Pasta Salad

This Summer Pasta Salad is so delicious! Makes 12 hearty servings! Each serving is four points for me. Use recipe builder to calculate points for you

Ingredients

  • 1 – 8-12 oz bag of pasta al dente
  • I used Fiber Gourmet light rotini
  • *1 red onion diced
  • *1 red and orange bell pepper diced
  • *1-2 jalapeños seeded and diced
  • *1 can black beans rinsed, drained and pat dry
  • *1 c. corn I used TJ’s Roasted corn
  • *1/4 – 1/2 c. chopped cilantro
  • *1 c. Light mayo
  • *1 c. BBQ sauce I mixed Gates and SF G Hughes
  • *Kosher/Sea Salt and black pepper – to taste

Instructions

  1. Boil pasta, drain & rinse in cold water. Set aside.
  2. *In skillet, sauté onion & jalapeño for a couple minutes and set aside to cool.
  3. *In large bowl, add Mayo and BBQ sauce and mix together. Add salt & pepper. Add in noodles and veggies. Add corn, beans and combine all together. Serve warm or cold!
