Stir-Fried Zucchini & Mushrooms with Rice – Lightened Up

Ingredients & WW Points:

  • 1 cup cooked white rice (use Β½ cup per serving) – 3 pts
  • 1 medium zucchini, sliced – 0 pts
  • 1 cup mixed mushrooms (shiitake, oyster, or your fave) – 0 pts
  • 2 cloves garlic, minced – 0 pts
  • 2 tbsp low-sodium soy sauce – 0 pts
  • 1 tsp sesame oil – 1 pt
  • 1 tbsp oyster sauce (optional) – 1 pt
  • Green onion & black sesame seeds – 0 pts
  • 1 tsp olive oil (for cooking) – 1 pt

Total (for 1 serving): ~6 WW points
(You can lower to ~5 by skipping oyster sauce or using cooking spray instead of oil.)


🍽 How to Make It:

  1. Cook the rice according to package instructions (or prep in advance for easy assembly).
  2. In a nonstick skillet, sautΓ© garlic and mushrooms in olive oil until they begin to soften (3–4 min).
  3. Add sliced zucchini and cook until just tender, another 3–4 min.
  4. Stir in soy sauce, sesame oil, and oyster sauce (if using). Cook 1–2 more min until everything’s coated and tasty.
  5. Plate it up: add your rice, pile on those veggies, sprinkle green onions and sesame seeds. Boom!
