- 1 cup cooked white rice (use Β½ cup per serving) β 3 pts
- 1 medium zucchini, sliced β 0 pts
- 1 cup mixed mushrooms (shiitake, oyster, or your fave) β 0 pts
- 2 cloves garlic, minced β 0 pts
- 2 tbsp low-sodium soy sauce β 0 pts
- 1 tsp sesame oil β 1 pt
- 1 tbsp oyster sauce (optional) β 1 pt
- Green onion & black sesame seeds β 0 pts
- 1 tsp olive oil (for cooking) β 1 pt
Total (for 1 serving): ~6 WW points
(You can lower to ~5 by skipping oyster sauce or using cooking spray instead of oil.)
π½ How to Make It:
- Cook the rice according to package instructions (or prep in advance for easy assembly).
- In a nonstick skillet, sautΓ© garlic and mushrooms in olive oil until they begin to soften (3β4 min).
- Add sliced zucchini and cook until just tender, another 3β4 min.
- Stir in soy sauce, sesame oil, and oyster sauce (if using). Cook 1β2 more min until everythingβs coated and tasty.
- Plate it up: add your rice, pile on those veggies, sprinkle green onions and sesame seeds. Boom!
