Believe it or not you can eat the ENTIRE spinach cheese crustless Quiche for just one weight watchers point it was a full pie dish, served myself and my husband and there is half left. my cottage cheese hating husband ate it with no complaints. You could certainly blend it if you’d like. I didn’t notice any significant change in texture from my regular crustless quiche, maybe a little moister. Crustless quiches are easy to make, especially if you prep ahead: Prepare the mixture of sautéed veggies and eggs ahead or the night before.
Ingredients
- 1/2 cup one percent milk
- 4 eggs
- 1 cup fat free cottage cheese
- sliced tomatoes
- pre-cooked mushrooms and spinach with just cooking spray
- Salt and pepper.
Instructions
- I whisked 1/2 cup milk with the eggs, stirred in the cottage cheese, added the sliced tomatoes, pre-cooked the mushrooms and spinach with just cooking spray, sprinkled those on. Salt and pepper. 375 degrees for 30 minutes
