INGREDIENTS
For the Salmon
- 2 salmon fillets skin-on or skinless
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp sesame oil
- 1 tsp sriracha
- 1 tbsp olive oil for searing
For the Bowl
- 2 cups cooked white rice
- 1/2 cucumber sliced
- 2 green onions sliced
For the Spicy Mayo
- 3 tbsp mayonnaise
- 1 tsp sriracha
- 1 tsp lime juice
INSTRUCTIONS
- Step 1: In a bowl, mix soy sauce, honey, sesame oil, and sriracha. Add salmon fillets and coat well. Let marinate for 15 minutes.
- Step 2: Heat olive oil in a skillet over medium-high heat. Sear salmon for 3–4 minutes per side until caramelized and cooked through. Set aside to rest.
- Step 3: In a small bowl, mix mayonnaise, sriracha, and lime juice to make spicy mayo. Stir until smooth.
- Step 4: Divide rice into two bowls. Top with cooked salmon, cucumber slices, and green onions. Drizzle with spicy mayo. Serve immediately.
NOTES
For extra flavor, add pickled ginger, avocado slices, or a sprinkle of sesame seeds. Swap white rice for brown or cauliflower rice to suit dietary preferences.
