My new favorite snack. I found this recipe for spicy carrot ribbons. The way I am eating it, it is 1 weight watchers point for the whole recipe!
Ingredients
- 6 carrots
- Tablespoon Soy sauce
- Teaspoon olive oil
- tablespoon of rice vinegar
- teaspoon of chili crisp
Instructions
- Use your peeler to make carrot ribbons.
- Start by washing and shredding your carrots. You can leave the skin on, so long as they’re scrubbed clean, but I choose to remove and discard the skin!
- To make carrot ribbons, simply peel the carrots and use a vegetable peeler to slice them lengthwise into thin, long strips, rotating the carrot as needed to create a continuous ribbon
- Next, add your carrots to a large bowl alongside all of the remaining ingredients.
- Toss to combine,
- The chili crisp is very hot, so I use just a little bit.
