Sourdough Dumplings

Made sourdough dumplings last night for dinner to go along with our chicken soup. Ohh my goodness! Like heaven!

They do expand much more than what I was expecting so mine are LARGE but no complaints there 😂

Ingredients

Soup:

* 2 tbsp olive oil

* 1 lb chicken breast (sliced)

* 1 large onion (chopped)

* 3 garlic cloves (minced)

* 2 large carrots (sliced)

* 3½ cups chicken bone broth

* 2 cups milk

* ¾ cup flour

* 2 tsp salt, ½ tsp pepper

* 1 tsp parsley, ½ tsp sage, ½ tsp thyme

Dumplings:

* 1 cup sourdough discard

* 1 tbsp milk

* 1 tsp salt

* 1½ cups flour

* 1 tbsp baking powder

Instructions

1. Prep: Slice chicken, chop onion, mince garlic, slice carrots.

2. Cook Soup:

* Heat oil, sauté chicken, carrots, and onion (~5 mins).

* Add garlic, cook 2 mins.

* Pour in broth, bring to boil.

* Mix flour + milk, add to pot to thicken.

* Add salt, pepper, and herbs.

3. Make Dumplings:

* Mix sourdough discard, milk, salt, flour, and baking powder into a thick dough.

* Drop 1–2″ dough pieces into soup.

* Sprinkle parsley, cover, simmer on low for 13 mins (don’t lift the lid!).

Tips:

* Too thick? Add broth.

* Too thin? Mix 1 tbsp flour with ½ cup soup, stir back in.
