What uou’ll need
1. 7 carrots, cut into 3/4-inch-long pieces
2. 1 tbs olive oil
3. 2tbs grated parmesan cheese
4. 2tsp fresh flat-leaf parsley, chopped (optional)
• Preheat oven to 220°C. Line a baking tray with baking paper. • Place the carrots in a steamer basket over boiling water. Cover the pan, and steam carrots for 15 minutes or until tender when pierced with a knife. • Transfer carrots to prepared baking tray. Drizzle with the oil, and season with salt and pepper; toss gently to coat. Spread the carrot pieces out evenly over the pan; press on each carrot piece with the bottom of a jar or mug to flatten. Bake for 25 to 30 minutes or until browned and crisp.
• Sprinkle with cheese. Bake for 5 minutes or until the cheese crisps. Sprinkle carrots with parsley, if desired.
