Skinny Chocolate Chip Bars

These Skinny Chocolate Chip Bars are made healthier-using protein pancake mix, eggs, unsweetened applesauce, and sweetened with monk-fruit natural sweetener, vanilla extract, and no sugar added chocolate chips! These make for an easy healthy dessert or even breakfast!

Ingredients

  • 2 1/2 cups Kodiak Cakes Protein Pancake Power Cakes, Flapjack and Waffle Baking Mix, Buttermilk
  • 2 large eggs
  • 3/4 cup zero point brown sugar substitute- I use Lakanto monk-fruit Golden Sweetener 
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp vanilla extract 
  • 1/2 cup unsweetened applesauce 
  • 1/2 cup or 56 grams Chocozero no sugar added milk chocolate chips or any no sugar added chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Spray a 9×13″ baking dish with non stick cooking spray. 
  2. In the large mixing bowl, mix together Kodiak Cakes Protein Power Baking Mix, eggs, brown sugar sweetener, baking powder, baking soda, vanilla, unsweetened applesauce.
  3. Mix until well combined.
  4. Fold in 1/4 cup chocolate chips and continue stirring until well combined. 
  5. Press batter into prepared pan-the batter will a bit sticky-don’t worry-that’s totally normal. 
  6. Sprinkle and press remaining 1/4 cup chocolate chips on top.
  7. Bake for 11-13 minutes, or when you insert a toothpick into the middle it comes out clean. ( You don’t want these to overcook or they’ll be dry!)
  8. Let cool for 5 minutes before cutting them into 20 equal slices. Enjoy!

Notes

How do I store the leftovers?

The leftovers can be stored at room temperature for up to 2 days. To keep them fresh- I recommend keeping them in plastic wrap or in an airtight container in the fridge for up to 4 days. Be sure to let them cool down to room temperature before you put them away, and store them in a container or a ziplock bag. 

 These cookie bars will stay fresh in the freezer for up to 3 months. Layer each bar between parchment paper to keep them from sticking.

I LOVE Chocozero no sugar added milk chocolate chips or Lakanto no sugar added chocolate chips. These two brands are my favorite when it comes to no sugar added chocolate chips. They are super delicious and have NO bitter aftertaste! If you prefer dark chocolate you can substitute the milk chocolate for Lily’s Dark Chocolate Chips, Stevia Sweetened, with no added sugar.  

Note: The overall point value for the bars would be the same for any of these no added sugar chocolate chips.
